Breakfast Ideas + New Recipe

I’m always on the hunt for new food ideas, so I thought I’d share a few of my new on-the-go  breakfast go-to’s here with you guys. I work a 9-5 so it’s nearly impossible to cook a healthy breakfast in the morning before work. I was packing an oatmeal each morning, but I felt like I needed to mix things up a bit. Here are a few ideas that I’ve been loving lately:

Egg and vegetable frittata

Ingredients: 4 whole eggs, 16 oz carton of liquid egg whites, 1 sliced green bell pepper, 1/2 white onion sliced, 1 tbsp olive oil, 1 tomato diced, cumin, oregano, salt, chili powder to taste

Directions: Preheat the oven to 400 degrees. Heat a large oven safe saute pan on high. Saute bell pepper and onion with olive oil until soft. Gradually add the spices to your liking. Remove from heat. In a separate bowl, mix the eggs and egg whites, then add them to the vegetable mixture. Add diced tomatoes. Put pan in preheated oven and cook for 10-12 minutes. If your diet allows, add cheese, guacamole or hot sauce to  top!

I’ve been experimenting with different veggies and spices, and this has been my favorite so far. Please comment if you have any ideas for different ingredients to add! Also this is great to cook a batch on Sunday and bring to work each morning.

This pecan pumpkin oatmeal from Trader Joes

If you haven’t been to Trader Joes recently, you are missing out! They are fully stocked with pumpkin everything. This oatmeal adds great flavor to my normal morning oats. Also another easy thing to grab in the morning and bring to work.

Protein Pancakes from flap Jacked

These are delicous, and so quick and easy to make. I love pancakes on the weekends, it feels like an extra treat. With this mixture, all you have to do is mix with water and heat on the stove. I topped mine with coconut chips in this picture. Here is the website for more info: www.flapjacked.com

Acai Smoothie Bowl with ZICO

Zico coconut water is my go-to for hydration needs. I love the flavor of coconut water, especially before or after working out. Zico can also be used in smoothies, baking and protein shakes, among other delicious recipes. Right now I’m really into Acai smoothies bowls. Acai berries are basically THE BEST thing for you (in my opinion, not even kidding!). You can read more about acai here, here, and here.

For my smoothie bowls, I basically throw some fruit, zico water, a frozen acai packet and sometimes greek yogurt or protein powder into a blender then top a few healthy ingredients I have laying around in my kitchen.

This particular bowl I blended the following ingredients:

  • Zico water
  • Frozen blueberry and strawberry mixture
  • Frozen Acai packet (bought at whole foods)
  • Non fat greek yogurt
  • Protein powder (optional-I used designer whey strawberry flavor)

Then topped with the following:

  • Chia seeds
  • Oats
  • coconut chips
  • Fresh berries

This is perfect for breakfast or really any time of day! (I’ll post some green smoothies soon!)

Protein Pancake Recipe

I’m sure you have heard this a million times before, but breakfast is the most important meal of the day! I find myself eating a lot of the same meals, especially during a busy work week. My go-to is a non fat greek yogurt and berry mixture. Sometimes I will add some honey or a taste of natural nut butter. I work for Diamond Foods, so this Kettle Nut Butter is my fav, they also have cashew butter, salted or unsalted. Click here to go to the Diamond Foods Website.

On the weekends, I really enjoy making a yummy breakfast to go along with my nice big cup of coffee. I love making different scrambles and getting creative with all sorts ingredients. An egg white scramble with avocado and smoked salmon on the side has been popular in my house lately. Breakfast is an absolute must for me! If I skip breakfast, I will be dragging and energy less all day long. Be sure to fuel your body with a protein filled power breakfast to give you tons of energy throughout the day!

I have been experimenting with different protein pancake recipes a lot lately. Some miserably failed and some were quite successful. This was the definite winner in my book! A delicious and healthy way to start your day and power you with the fuel you need.

Protein Pancake Recipe

  • 1 scoop Whey Protein (vanilla or chocolate)
  • 2 egg whites
  • 1/4 cup oats
  • 1/2 large banana (you can also substitute with non-fat greek yogurt or pumpkin puree)
  • 1TB Unsweetened Vanilla Almond Milk
  • 1/8 teaspoon of Baking Powder
  • 1/2 teaspoon of Cinnamon

Directions: Mix all ingredients in a large bowl or blender. Allow the mix to sit for a few minutes. Heat up a skillet and spray with non stick cooking spray. Pour batter onto the skillet and allow to cook for 2-3 minutes. Flip and cook for additional 2-3 minutes. Should make 2-3 pancakes.

Get creative! Top with cinnamon, berries, honey or a natural nut butter.
